Strawberry Rhubarb Gelatin
Yield: 4 servings
Ingredients
| 2 | cups | diced fresh rhubarb | |

| 3/4 | cup | sugar | |
|
|
|||
| 1/4 | cup | cold water | |
|
|
|||
| 1 | pkg. | (3 oz) strawberry gelatin | |
|
|
|||
| 1 1/2 | cups | whipped topping | |
|
|
|||
Directions:
In a saucepan, bring rhubarb, sugar and water to a boil. Reduce heat; simmer, uncovered for 3-5 minutes or until the rhubarb is softened. Pour into a serving bowl. Refrigerate for 20 minutes or until partially set. Fold in whipped topping; chill until firm.
