Red Potato Salad
Yield: 4-6 servings
Ingredients
| 1/4 | cup | mayonnaise | |

| 1/4 | cup | sour cream | |
|
|
|||
| 7 | medium red potatoes, cooked and cubed | ||
|
|
|||
| 1/4 | cup | shredded cheddar cheese | |
|
|
|||
| 2 | tablespoons | chopped red onion | |
|
|
|||
| 1 | strip | bacon, cooked and crumbled | |
|
|
|||
| 1 1/2 | teaspoons | snipped chives | |
|
|
|||
| salt to taste | |||
|
|
|||
| pepper to taste | |||
|
|
|||
Directions:
In small bowl, mix together mayonnaise and sour cream and set aside.
In a large bowl, combine potatoes, shredded cheese, onion, bacon and chives. Gently blend in mayonnaise/sour cream mixture. Salt and pepper to taste and refrigerate for at least 2 hours to blend flavors before serving.
