Curried Chicken Peanut Salad
Yield: 6 servings
Ingredients
| 2 | cups | chopped cooked chicken | |

| 1 | cup | fresh pineapple chunks or 1 can (8 ounce) pineapple tidbits, drained | |
|
|
|||
| 1 | cup | chopped peanuts | |
|
|
|||
| 2 | stalks | celery, chopped | |
|
|
|||
| 1/2 | cup | sour cream | |
|
|
|||
| 1/2 | cup | mayonnaise | |
|
|
|||
| 2 | tablespoons | peanut butter | |
|
|
|||
| 1/2 | teaspoon | curry powder | |
|
|
|||
| 1/4 | teaspoon | salt | |
|
|
|||
| Lettuce leaves | |||
|
|
|||
Directions:
Stir together chicken, pineapple, peanuts and celery.
Combine sour cream, mayonnaise, peanut butter, curry powder and salt; stir into chicken mixture until evenly moistened. Cover and chill before serving.
To serve, spoon salad onto lettuce lined plates.
